  • 4 - 6 x Chicken thighs, boned. Pat dry

  • For the marinade

  • 3 x Teaspoons Chinese Five Spice - salt free. See recipe below

  • 1 x Red onion - minced

  • 3 x Garlic cloves - finely minced

  • 1 x Teaspoon sesame oil

  • 2 x Tablespoons dry sherry

  • 2 x Teaspoons olive oil

  • To make true Chinese Five Spice seasoning

  • 3 x Tablespoons Star Anise - ground

  • 1 x Tablespoon Cinnamon - ground

  • 2 x Tablespoons Fennel seeds - ground

  • 1 x Tablespoons Szechuan or Black Pepper

  • 1 x Pinch Nutmeg - optional

Mix all the ingredients in a bowl then carefully rub and cover all of the chicken.

Important you now marinate for at least one hour - overnight even better before returning to room temperture and cooking to your favourite method. We found oven roasting at 180c untill just firm worked well
