A Marinade for Chinese Five Spice Chicken

4 - 6 x Chicken thighs, boned. Pat dry
For the marinade
3 x Teaspoons Chinese Five Spice - salt free. See recipe below
1 x Red onion - minced
3 x Garlic cloves - finely minced
1 x Teaspoon sesame oil
2 x Tablespoons dry sherry
2 x Teaspoons olive oil
To make true Chinese Five Spice seasoning
3 x Tablespoons Star Anise - ground
1 x Tablespoon Cinnamon - ground
2 x Tablespoons Fennel seeds - ground
1 x Tablespoons Szechuan or Black Pepper
1 x Pinch Nutmeg - optional
Mix all the ingredients in a bowl then carefully rub and cover all of the chicken.
Important you now marinate for at least one hour - overnight even better before returning to room temperture and cooking to your favourite method. We found oven roasting at 180c untill just firm worked well
