A Subscribers Sumac and Lemon Salt Free Condiment

A perfect salt replacement. A Sumac and Lemon condiment for favourite recipes


  • 2 x Medium/ large red onions - finely cut into half moon shape, refer Preparation

  • 5 x Teaspoons Sumac

  • 3 x Tablespoons best olive oil

  • 2 x Tablespoons lemon juice or more to your taste

  • 2 x Teaspoons sweet paprika

  • Pepper - sprinkle


Make sure the onions are very finely cut in half moon shape then add the olive oil, lemon juice, paprika and sumac and - this is the critical bit - heavily bruise the onion pieces with your fingers. This is essential for the citrus and sumac flavours to be absorbed and soften the onions.

Refrigerate at least 30 minutes before serving.

Comments: Repeating the notes above it is essential that the red onions are very finely cut into to half moon shapes and then heavily squeeze and bruise the onions.
