Ancho Dried Pepper Paste

A wonderfully distinctive paste with flavours to pair with your favourite recipes


  • 200g Ancho whole dried peppers

  • 4 x Garlic cloves - diced ready to puree

  • Vegetable oil - best quality

  • 1 x Teaspoon freshly ground Cumin

  • Pinch black pepper


To create a stunning salt free paste open the Ancho Pepper, remove the seeds and stem and place in a hot oven for three minutes to enhance the flavour, then soak in hot water for 30 - 45 minutes to rehydrate.

Next puree into a paste with garlic cloves, adding vegetable oil to your preferred consistency but make sure it is not too runny, adding a touch of pepper and a teaspoon of ground cumin to enhance the smoky flavour. 

Amazing Flavour

From our view salt is not needed. You will now have a paste loaded with amazing flavour that will refrigerate for several weeks.   The smoky, sweet, slightly spicy flavour of the paste pairs beautifully with slow roasted pork, and wonderful when added to your favourite recipes for casseroles, stews, soups and dips.

When added to your favourite pizza you will have a flavour made in heaven and of course, totally at home in all Mexican recipes, especially Tacos.
