From Citrus to Ceviche - Salt Free
The legendary Peruvian national seafood dish.
400g Firm, fresh white fish, say, Barramundi or Kingfish. Essential the fish is very fresh !
1 x Small red onion, finely diced
5 x Juice of Limes
1/2 x Juice Orange
2 x Medium firm tomatoes cut into 2cm squares
1 x small Lebanese cucumber cut into 1cm squares
1/2 x Teaspoon Chilli Flakes - or less to your taste. Diced.
1 x Teaspoon Sumac
Black pepper to your taste but important to the dish
1 x Medium bunch Coriander, chopped. Reserve a little for serving
Cut the fish into 2cm squares and toss with the marinade of the limes and orange juice, sumac, coriander, diced chilli flakes and the finely diced red onion.
Leave to marinate for at least 15 minutes - 30 minutes is better, and when a nice opaque colour, serve immediately dressed with the diced tomato, cucumber, avocado, black pepper and the remaining coriander chopped leaves.
