Greek style Chicken with Yoghurt,Tomato and Fennel Seed Rub - Salt Free
Some recipes have such great flavour they do not need salt !
1 x Whole chicken - smallish, around 1.5k
1 x Cup unsweetened natural Greek yoghurt
1 x Tablespoon tomato paste
4 x Teaspoons of Salt Free, Spice Road Spices - SpiceOn Chicken Rub
2 x Tablespoons fennel seeds
Olive oil for brushing
Your favourite recipe for bread crumb stuffing
4 x Garlic cloves - finely diced
1 x Tablespoon of freshly grated lemon zest
Black pepper to taste
In a bowl mix the SpiceOn Chicken Spice Blend, Yoghurt and Tomato Paste and set aside. Pat dry the chicken and bring to room temperature then lightly cover with olive oil.
Liberally spread the Yoghurt mix over the chicken. Then sprinkle the Fennel seeds and Black Pepper over the paste, loosely cover with foil and refrigerate for at least 4 hours, the longer the better really.
Then return the chicken to room temperature, add your stuffing, lemon zest and garlic cloves to the chicken and place in a preheated oven at 180c and bake for approx. 1.5 hours, until fully cooked without burning the yoghurt marinade.
