Mexican Vegetarian Berenjena with Ancho Peppers, Salt Free - and a Pork Chop option.
Berenjena is Mexican for Eggplant. The stunning Ancho Peppers add a lovely mild, sweet, raisin like flavour.
You will need
1 x Medium Berenjena (Eggplant) - diced 2cm squares
1 x Green Pepper - loosely diced
1 x Red Pepper - loosely diced
1 x Red Onion - diced
1 x Zucchini, sliced
1 x Cup rich chicken stock
1 x Tin Italian diced tomatoes
2 x Tablespoons tomato paste
4 x Heaped teaspoons Spice Road Spices Salt Free SpiceOn Mexican Blend or Spices as noted below
2 x Whole Ancho Peppers, sliced and deseeded
1 x Tin Black beans, drained
Method In a thick based pan cook down the onion until soft, then stir in the tomato paste and add the Ancho Peppers and the Berenjena (eggplant) and stir to soften. About 10 minutes.
Then add the SpiceOn Mexican Spice Blend and the Chicken Stock and stir to mix.
Now add the red and green Peppers, Tomato and Tomato Paste, and Black Beans and stir to mix well. Continue cooking over a low heat until the mix is nicely soft.
Caribbean Pork Chops
In a bowl mix Sweet Paprika, a sprinkle of chilli flakes to your taste and diced parsley with a little olive oil to give a paste and liberally spread on both sides of the pork then refrigerate for 30 minutes. Then bring back to room temperature and in a hot pan with olive oil or ghee cook to your preferred doneness.
Comments: Note: If you are blending your own Spices, the Spices used in the SpiceOn Mexican Blend are:
Allspice, Cumin, Cayenne Pepper, Black Pepper, Mineral Salt, Oregano, Fennel, Sweet Paprika. Garlic is included in the SpiceOn Mexican Blend so you should add 3 x finely diced or minced Garlic cloves if you are doing a self blend.
