Pan Fried Boneless Pork Chops with Star Anise, Ginger, Apple and a Cider Vinegar Sauce
4 x Pork Loin Chops - bone removed
4 x Teaspoons, freshly ground Star Anise
2 x Teaspoons ground ginger
4 x Garlic cloves, minced
1 x Cup Field Mushrooms - finely sliced.
1 x Teaspoon ground rosemary
1 x Granny Smith Apple, peeled and sliced
Olive oil
40g Butter
50ml x Best quality Cider Vinegar
1 x Cup Apple Cider
Coat the Pork chops with olive oil and generously rub the ground Star Anise and Ginger to both sides - refrigerate for at least 30 minutes
Heat a heavy pan, add oil and brown the pork chops both sides and set aside in a warm oven
Add the minced garlic cloves, allow 2 minutes then deglaze the pan with the cider vinegar, add the apple cider, rosemary, butter and reduce to thicken
Replace the pork chops in the pan with the apple and cook over a medium heat for 10 minutes one side and turn over for 4 minutes or until firm
Serving suggestion: Serve with your choice of potatoes and a tossed combination of rocket, baby spinach leaves, mignonette and balsamic dressing.
Important: This recipe works nicely as salt free with the ground star anise and ginger. If salt reduced add sea salt to your diet and taste.
