Robin Bakers King Creole Cajun Prawns and Avocado.


  • 2 x Medium large avocados, sliced length wise. Stone removed

  • 8 x Cooked king prawns, peeled. Cut into 2cm pieces

  • 2 x Tablespoons mayonnaise - important best quality

  • 4 x Teaspoons Spice Road Spices King Creole Cajun spice

  • Juice x 1 small lemon

  • Black Pepper to your taste


Take the half avocados and with a spoon remove the filling, taking care not to damage the outer skin, then lightly spray or cover the inside skins with olive oil and set the filling aside in a bowl.

Now add the mayonnaise to the diced king prawns, mix well then while stirring, add the the King Creole Spice and blend well with the prawns and mayonnaise.

Next half fill the avocado skins with the avocado filling and drizzle juice of 1/2 the lemon then add the prawns and the remaining avocado filling and mix with the prawns, keeping the avocado pieces chunky. Squeeze the juice from the remaining 1/2 lemon, Sprinkle with black pepper and serve.

Important: For this dish the mayonnaise should be best quality
