Salt Free - Josh's Lemony Chicken Drumsticks and Thighs with Basil and Mint
A special recipe taking chicken drum sticks and wings to new heights
6 x Chicken Drumsticks
4 x Chicken thighs - bone in
1 x Table spoon of Pomegranate Molasses
2 x Garlic cloves crushed
2 x Teaspoons lemon zest
6 x Teaspoons of Spice Roads Spices Salt Free SpiceOn Chicken
Small bunch of fresh basil - needs to be finely diced
In a bowl mix the olive oil, Pomegranate Molasses, crushed garlic, lemon zest, mint and basil and Spice Seasoning to form a paste.
Then liberally coat the chicken with this paste and then drizzle a little of the Olive Oil over the mixture. We cut small slits in the chicken before coating with the paste and olive oil.
Refrigerate for at least one hour to let the paste soak into the chicken.
Bake in a preheated oven at 200 degrees for around 20 minutes, depending on your oven.
We served with sliced horseradish, mesclun lettuce, lemon vinaigrette, pitted black olives and Greek yoghurt
Note : For winter days an alternative for this recipe could be a Rice Pilaf with Raisins and Pine Nuts.
