Salt Free - Sicilian Mushroom, Marsala and Baked Radish Ragout
The perfect Side Dish that works as a stand alone Main !
You will need
Serves 4 - 6 as Side Dish
300g Button mushrooms, sliced - refer note
200g Oyster mushrooms, sliced
4 x Spring onions, sliced
3 x Cloves of garlic, finely diced
1 x Cup rich chicken stock or broth (Ref Blog)
1/2 x Cup marsala
1/2 x Cup heavy cream
2 x Tablespoons Dijon mustard
1/2 x Cup parmesan cheese, freshly grated
3 x Tablespoons parsley chopped
1 x Bunch Radishes, baked and sliced in half. .
Method In a heavy pan heat the Olive Oil and cook down the Onions until soft, adding the garlic after the the onions have taken the initial heat to avoid burning.
Turn up the heat to medium high and add the mushrooms, cook to reduce the mushroom liquid then add the Marsala and Stock, stir, then add the Cream and Dijon mustard and stir to reduce for sauce to thicken.
Add the Parmesan and the Parsley, stir to blend. Now place the baked Radishes as you choose and you are ready for serving.
Notes: (1)The Button and Oyster mushrooms are our suggestions and may be replaced by your preferred mushrooms. Important that all mushrooms are sliced into relatively large portions for best visual effect.
(2)The Dijon mustard is a nice counter balance to the sweetness of the Marsala and the Cream. Substitute a dash or two of Sherry Vinegar if you wish.
