Ethiopian Beef Stew with Fenugreek

Ingredients

  • 600g x Chuck Steak, diced around 2cm

  • Plain flour

  • Olive Oil

  • 2 x Medium red onions - diced

  • 4 x Garlic cloves - finely diced

  • 2 x Medium carrots - finely chopped

  • 2 x Medium parsley stalks - finely chopped

  • 2 x Tablespoons tomato paste

  • 2 x Cups best home made style beef or chicken stock

  • 5 x Teaspoons Ethiopean Berbere spice mix with Fenugreek - salt free or see note below

  • 2 x Teaspoons Pomegranate Molasses - perfect salt replacement. See note below

  • 1 x Tablespoon lemon zest

  • 1 x Cup flatleaf parsley

  • Salt is not an esssential in this recipe - the pomegranate molasses and lemon zest do a great job replacing salt.

  • However, if you prefer a little salt, add to your preference or diet.

Preparation

It is important that the diced chuck steak is browned on all sides. Lightly cover the meat with the flour and in the heavy based pot brown the meat then set aside.

Next add a little more olive oil to the pot and add the onions, garlic, carrots and celery, taking care not to burn the onions. Cook down until caramelised then add the tomato paste to the base of the pan and hold for 3 minutes to reduce the acid flavour then stir into the onions and add the Stock, Pomegranate Molasses and the Berbere Spice Mix and stir well.

Return the meat to the pot, add a little water if needed and with the lid securely in place, braise on a low heat for 2 hours until the meat is falling apart and the sauce thickened.

Serve with your choice of rice.

Important: It is a nice thing to do to make your own Berbere Spice Mix and a nice thing to have ready in your pantry. This is the recipe:

1 x Tablespoon ground cumin 1 x Tablespoon ground coriander 1 x Tablespoon sweet paprika 1 x Tablespoon sumac 1 x Teaspoon ground fenugreek 2 x Teaspoons onion powder 2 x Teaspoons garlic powder 1 x Teaspoon ground ginger 1 x Teaspoon ground nutmeg 1 x Teaspoons teaspoon ground cinnamon 1/2 x Teaspoon chilli powder or to your taste

Comments: The Pomegranate Molasses is important to this recipe, especially if you are reducing or replacing salt. Another lovely thing to have in your pantry for all manner of interesting recipes.
