Greek Tzatziki with fresh Mint and natural Yoghurt

Ingredients

  • 1/2 x Telegraph style cucumber - peeled and finely chopped

  • 5 x Sprigs of fresh mint - leaves only, finely chopped

  • 1 x Garlic clove - very finely chopped - essential

  • 200g Best quality Greek natural, unsweetened yoghurt - see note

  • 1 x teaspoon dried dill tips

  • 1 x Tablespoon lemon juice

Preparation

Carefully place the ingredients except the mint in a bowl and refrigerate for 1/2 hour then add the chopped mint just before serving. Decorate with mint leaves and lemon wedge.

Important: Add the chopped mint just before serving.

Comments: We used Jalna natural Greek Yoghurt in the test - an excellent product
