Orecchiette alla Panna. Classic Pasta with Cream, Mushrooms and Parmesan

Wonderfully easy on a busy evening. If all items in the recipe are ready, the prep. can be finished while the pasta is cooking. A pasta dish with a long tradition with cream., mushrooms and cheese. Perfect.

You will need

250g x Orecchiette Pasta

Olive oil

3 x Cloves garlic - diced

1 x Cup freshly grated parmigiano reggiano or parmesan cheese

1 x Cup button mushrooms - sliced

1 x Cup heavy cream

1 x Pinch nutmeg

salt and black pepper to your taste or special diet

Method

In a pan with a little olive oil, bring to medium heat and fry down the onions and garlic until caramelised - about 5 minutes. Do not burn the garlic. Next add the mushrooms with the butter and allow to soften then stir.

Now add the cream, bring to boil then reduce to a simmer while the Oricchetti pasta is boiling. Then when al dente serve directly to the pan with the sauce. Do not drain the pasta.

Next, gently fold the cheese into the pasta and sauce. Add salt and pepper to your taste and serve.
