Baked Chicken with Orange Zest, Ginger, Fennel and Thyme - salt free optional

  • 4 x Chicken Thighs - boneless

  • 1/2 x Cup orange juice

  • 2 x Tablespoons orange zest - freshly ground

  • 2 x Tablespoons olive oil

  • 2 x Tablespoons minced ginger

  • 2 x Tablespoons honey

  • 1 x Teaspoons fennel seeds

  • 1 x Teaspoons dried thyme

  • 1 x Medium large garlic clove - finely diced

  • 1 x Pinch medium chilli powder - (See - SPICES to order

  • Salt is optional to your diet and taste. The chilli powder works well as a salt replacement


In the same tray as you will be baking the chicken, add all the ingredients and stir well to combine then place the chicken in the tray and liberally coat with the ingredients and marinate for 11/2 hours - this is important.

Now heat your oven to 200c and when hot, cover the chicken with a lid or foil and bake for around 25 - 30 minutes until the chicken is firm without being overcooked
