Baked Chicken Pieces with Paprika and Cumin Rub
500g x Chicken thighs and drumsticks as you choose
Plain flour
1/4 x Cup olive oil
4 x Teaspoons paprika - sweet or smoked
2 x Teaspoons freshly ground cumin seeds - see note
1 x Teaspoon garlic powder
1/4 x Teaspoon black pepper
2 x Teaspoons lemon zest
Salt to your taste or special diet
First essential, the chicken breast must be totally dry. Now start your rub. In a medium bowl add the paprika, plain flour, ground cumin, seasoning, lemon zest and garlic powder then finish with the olive oil to make a paste. Make sure it is not too runny.
Next, using your hands, carefully rub the mixture into the chicken pieces and place in a refrigerater for at least 30 minutes. If you have the time one hour would be better.
Now place in the chicken in a baking dish with.......in a preheated oven at 200c and bake for 30 minutes or until the chicken is firm
Important: PLEASE wherever you buy your chicken pieces, do not buy ground cumin in the little packets on hooks. Ground cumin quickly loses its flavour. Therefore, always best to grind your own and quickly toast in a dry pan before adding to the rub . For a small amount crush the seeds in a small bowl - Mortar and Pestle style.
