Baked Salmon with Paprika Rub and Orange and Lemon Slices

Before you start this recipe we strongly recommend you have the very best ingredients. Stale ingredients, herbs and spices will do little to give the true flavours this recipe promises
4 x 200g Salmon portions - skin off. Pat dry
Olive oil
1 x Orange sliced - 1/2cm thick - reserve 4 slices
1/2 x Lemon sliced - 1/2cm thick - reserve 4 slices
60g x Butter
For the Rub
2 x Tablespoons olive oil
2 x Teaspoons paprika sweet
1 x Teaspoon cumin ground
1 x Teaspoon dried thyme
1 x Garlic large clove - minced
Juice x 1/2 lemon
1/2 x Teaspoon Aleppo pepper - important
Salt to your taste or special diet
For the rub, place all ingredients in a small bowl and mix well to a smooth paste then carefully rub into the salmon.
Then in a baking dish melt the butter until lightly browned then place the orange and lemon slices across the base of the dish and place the Salmon on top of the orange and lemon slices so the salmon fits snugly over the slices.
Then place the reserved orange and lemon slices on top of the salmon pieces and in a medium hot oven bake for 25 - 30 minutes until the salmon is flaky. Serve with the orange and lemon slices.
