Creole Okra with Chorizo, Tomato, White Beans and Lime

Ingredients

  • 400g x Small Okra - must be small. Larger okra will not work

  • 1 x Medium onion - diced

  • 1 x Medium celery stick

  • 4 x Garlic cloves - minced

  • 2 x Chorizo sausages - sliced

  • 1 x Tin diced tomatoes

  • 1 x Cup best home made style chicken stock

  • 1/2 x Teaspoon crushed chilli flakes or to your taste

  • 1 x Teaspoon allspice - freshly ground

  • 1 x Teaspoon smoky or sweet paprika

  • 1 x Teaspoon dried thyme

  • 2 x Tablespoons lime juice - lemon juice would work

Preparation

Dice the okra to 2cm pieces and soak in white wine vinegar for 30 minutes then drain and pat dry and set aside.

In a medium hot pan with olive oil add the onions, garlic and celery and fry down until caramelised. Then add the chorizo slices and lightly brown on both sides, then add the okra, white beans, tomato, chili flakes and spices and stir well.

Cover the pan and on a low heat, simmer for 30 minutes until the okra has softened then add the lime or lemon juice. You will find that the okra has naturally thickened the sauce without any need to reduce.

Important: For best results make sure you buy small okra.
