Greek Pork Souvlaki with essential Tzatziki Sauce
Wonderful lemony flavours
800g x Pork loin cut into 3cm squares - see note
4 x Garlic cloves - minced
1 x Teaspoon cumin - ground
1/2 x Cup red wine
2 x Tablespoons dried oregano
2 x Tablespoons lemon juice
1 x Bay leaf - finely crumbed
6 x Skewers depending on how you wish to serve and how many guests.
Tzatziki Sauce.
Place all ingredients in a medium bowl - stir well so that everything is combined, cover with cling wrap and marinate for at least three hours, however, if you can arrange it, overnight is best.
When ready, allow the pork and marinade to return to room temperature then thread onto your kebab sticks.
Important: The pork loin works best as it will soak up the flavours when marinating
