Italian Sausage Braised with White Beans and Fennel

4 x Thick Italian Sausages
1 x Medium onion - diced
2 x Garlic cloves diced
Olive oil
1 x Tablespoon fennel seeds
1 x Tablespoon tomato paste
1 x Tin Italian diced tomatoes
1 x Tin cannellini beans or similar white beans. Drained
1/2 x Cup best home made style chicken stock
1 x Pinch chili flakes
1 x Cup parmesan - shaved. Avoid the packet shaved parmesan
In a heavy based pan with a little olive oil cook the sausages until just beginning to firm and allow to cool then slice into 2cm pieces and set aside.
Next, add the onions and garlic to the same pan with olive oil and fry down until soft and caramelised. Then add the tomato paste, chili flakes and fennel seeds. Stir to bring everything together.
Now return the sliced sausage to the pan than add the tomatoes and chicken stock to the pan. Cover and cook for 25 - 30 minutes to reduce a little then sprinkle with the shaved parmesan.
