Natural Chicken or Vegetable Stock
You will need
500g x Chicken wings. Joints broken to release the marrow
1 x Large onion - quartered
2 x Celery sticks - loosely chopped
2 x Medium carrots - loosely chopped
1 x Bunch fennel leaves
3 x Garlic cloves - peeled and whole
1 x Teaspoon dried thyme
1 x Teaspoon whole peppercorns
Water to fully cover the ingredients
Do not add salt. If using salt in your recipe, this will come later.
Simply add the ingredients to a large pot and cover with water. Bring to a low boil and as the water heats, remove any scum the rises to the top. Then reduce heat to a low simmer for around three hours depending on how strong you prefer the stock. The more you reduce the liquid the stronger the stock. To make a Vegetable Stock simply greatly increase the vegetables together with any left over other vegetables you may have.
