Pan Seared Pork Medallians with Natural Pork Seasoning, Mushrooms, Apple and Creme Fraiche - Salt Free or Low Salt

  • 4 x Pork medalians

  • Olive oil

  • 1 x Red onion - cut in to half moons

  • 4 x Garlic cloves, finely diced

  • 1/2 x Fennel bulb, cored and sliced

  • 6 x Teaspoons Spice Road Spices salt free, natural Pork Seasoning

  • 2 x Tablespoons best quality cider vinegar

  • 1 x Cup creme fraiche

  • 1 x Full cup button mushrooms - finely sliced.

  • 2 x Red skin apples, peeled and cut into small squares

  • 1 x Tablespoon lemon juice

  • 1/2 x Cup mint leaves


Coat the Pork with olive oil and generously rub the salt free Pork Seasoning to both sides - refrigerate for at least 30 minutes

Then in a heavy based pan, add oil and carefully brown the pork on all sides and set aside in a warm oven.

Next add the cider vinegar to deglaze the pan then add the onion, garlic, fennel and fry down until soft. Then add the apple pieces and the mushrooms to soften a little, about 5 minutes, then add the creme fraiche. Stir well for a few minutes to settle the flavours in the pan.

Return the pork medallians to the pan, and cook over a medium heat for 7 minutes on one side (depending on the thickness of the pork) stirring the sauce then turn over for 3 minutes or until pork is firm.

Now add the lemon juice and the mint leaves and mix well - allow 3 minutes for the mint flavours to join the sauce before serving...

Serving suggestion: Serve with your choice of potatoes and a tossed combination of rocket, baby spinach leaves and mignonette. .

Important: This recipe works nicely as salt free. For people on a low salt diet, add sea salt to your diet when adding the pork seasoning.
