Another Spice that should be treated with some caution. Like Rosemary, Cloves can easily overpower a dish so care is needed with your recipe.

Essentially, Cloves are used in pastry and sweet dishes and are rightly an essential for Home Bakers, however, Cloves have an important place in meat and poultry dishes. The Camphor and a little pepper style zip adding a distinctive flavour especially when matched with Cardamon.

Cloves, both whole or ground match well with Ginger Cardamon and Star Anise and are a perfect match with Citrus.
